Green & Tonic is looking for our next director of commissary operations


Responsibilities:


  • Oversee daily operations of the commissary kitchen & distribution team, including food prep, packaging, and distribution.
  • Manage commissary & distribution staff including hiring, training, scheduling, and performance evaluations.
  • Monitor food safety, sanitation, and hygiene standards in accordance with health department regulations.
  • Set daily pars by forecasting production needs.
  • Maintain accurate inventory of ingredients, packaging, and supplies; place orders and manage vendor relationships.
  • Track and manage food costs, waste, and labor efficiency.
  • Ensure all food items are prepared and delivered on time to multiple restaurant locations.
  • Implement and maintain procedures for production, storage, and transportation.
  • Maintain cleanliness and organization of the commissary facility.
  • Work cross-functionally with operations, stores, and culinary teams.


Requirements:


Minimum of 3 years of restaurant management


Servsafe Certified


Valid Driver's License


Open Availability


Full Commitment to the brand and manager position


Job Type: Full-time


Pay: From $75,000.00 per year
